WINTER hibernation is very boring when the Great Ocean Walk beckons - offering greater solitude, opportunities to see koala joeys emerging from the pouch, whales swimming the Southern Ocean and the warming welcome of the Aire Valley Guest House.

From May to October humpbacks and southern rights are seen almost daily from Victoria's Great Ocean Walk which stretches 104 kilometres from the resort town of Apollo Bay to the famous limestone stacks the Twelve Apostles.

It's a time when snakes have taken cover for the cooler months, the Great Aussie Salute is obsolete as flies have disappeared, and the crackling wood fires at Aire Valley Guest House are the perfect welcome home after a life-affirming day on the world-class Great Ocean Walk.
The Guest House, which also houses Victoria's greenest restaurant, is offering a winter walkers' package for the months of May, June and July which includes accommodation, a shuttle service to and from set-down points along the walk, lunch with salads hand-picked from their garden, and three course dinners made from the finest regional food.

Aire Valley Guest House owner and chef Annabel Tunley said their veggie patch was burgeoning with produce which would have a strong influence on the winter menu. Otways rack of lamb would be marinated in their home-grown garlic and rosemary and served with veggies picked minutes before serving.

With bumper crops of beetroot and pumpkin plumping up, the winter menu will feature homemade Borscht, and pumpkin soups.

Annabel's home-gown rhubarb crumble has been known to restore and reinvigorate tired walkers from their taste buds right down to their toes.

For walkers who like to photograph their experiences, winter in the Otways can be ethereal and moody or fully lit with brilliant blue skies and spectacular sweeping waves in Mediterranean blue crashing against the skyscraper sea cliffs.

For those wanting to spy native fauna in their natural habitat, kangaroos and wallabies tend to graze for longer during the daylight hours of winter, koala joeys can be seen in the safe and warm arms of their furry mums from late July, and it's a great time to catch a glimpse of the Otways carnivorous snail - the fabulously named Victaphanta compacta.

There are countless varieties of fungi in a myriad of colours and forms to be seen in the Otways - some are the stuff of fairytales - bright red caps with white dots sat on plump white stalks.
The brilliantly coloured scarlet robins can be spied in the densely wooded forests and another winter visitor is the flame robin which is more at home in the open woodlands.

Knowing that spring isn't far away and that we need a substantial amount of food for spring, especially for the inaugural Otways Paddock to Plate food and wine festival, I have planted seeds in seedling trays in my office window. This keeps birds and bugs away! After they have germinated they can then be transferred to the greenhouse and then the garden in spring. A 4 tier small greenhouse sits in front of the window and the temperature stays at about 15-18 degrees.

New Seedlings

Currently we have probably about 2,000 seedlings in the Greenhouse. Broad beans, sugar snaps, red kale, variety of onions, shallots, variety of lettuces, beetroot. Over the past week a lot of beetroot, peas, broad beans, onions, spinach and lettuce have been planted out in the garden.

Great Ocean Walk Fluker Post Project

There are currently 10 Fluker Posts installed on the Great Ocean Walk between Blanket Bay and Johanna Beach. These were installed on the 19th and 20th April, 2010. This project has been funded by Parks Victoria as a 12 month pilot project.

In a nutshell, the system requires the installation of a number of 100mm x 100mm wooden “Fluker Posts” (an example of one of the posts is shown below).

No camera is left on the post. Instead, either the Park Rangers, the researcher, tour operators, or members of the public place their own camera in the “camera cradle” on top of the post and take a picture that looks at exactly the same perspective. Each Fluker Post is customised when it is put in place (ie. the top of the post is cut at a specific angle so that the camera looks at the section of track in question).

The pictures are then emailed to FlukerPost@gmail.com to be included into a chronologically ordered Power point presentation made available for all to see at:

We currently have 3 x Fluker Posts at the You Yangs Regional Park (data has been collected over a 714 day period), 3 x Fluker Posts at the Brisbane Ranges National Park (data has been collected over a 91 day period), and the 10 x Fluker Posts on the Great Ocean Walk. Results from these Fluker Posts can be seen at the slideshare website mentioned above.

Dr Martin Fluker lectures in Tourism at Victoria University, Melbourne, and has been running this project through the auspices of the Institute of Sustainability and Innovation, Victoria University.

The value of this Victoria University/Parks Victoria research project is that it provides an effective and economical way of monitoring the visual condition of specific sections of track on the Great Ocean Walk (GOW) over extended periods of time (years).

Some of the benefits of this system include being able to:

• Monitor changes occurring at remote locations of the GOW from wherever anybody has an internet connection.
• See how particular sections of track on the GOW are coping with increased visitation.
• See how sections of track are coping with erosion caused by weather.
• See how sections of track are coping with regrowth of cleared bush.
• Test the effectiveness of track repairs.
• Offer the opportunity for users of the track to engage with the ongoing monitoring and care of the track in a meaningful way.

Summer Planting

It has been a while since I have posted on the blog. September to January have been the busiest on record. The development of our edible garden for the Restaurant has been a great success. There are very few places if any where the food is so fresh.

We've had a lot of planting over summer. I have taken the approach of planting in the ground plus at the same time planting the seeds in seed trays in the green house to compare the growing times and success rates. The spinach I planted outside in spring all seemed to disappear which was disappointing. My lettuce was much more successful.

Water over summer is always an issue. I have rigged up a system where I can pump water from our natural spring down the bottom of the hill and water the whole garden very quickly with a series of sprinklers, hoses and irrigation. This has been very handy on hot days to be able to water the whole garden very quickly at the end of the day. This is usually done at about 6-7pm while I'm picking vegetables for the restaurant in the evening. Last year we lost a lot of veges with the heat. This year we have been much more prepared.

We recently took a flight with Apollo Bay Aviation and flew to the 12 Apostles and then back over Aire Valley Restaurant and managed to get some photos. This picture shows the size of our vegetable garden. Over the past year it has triple in size and plans are underway to increase this further over the next year.

Spent some of the afternoon planting seeds. 80 Spinach seeds. 72 sweet basil seeds - maturity 6 weeks. 480 baby beets - maturity 6-7 weeks. 80 capsicum - maturity 10 -12 weeks. Sun coming through the green house window today so may do some tomorrow if the afternoon sun is there again.

Tourism Victoria recorded a short video about our restaurant and organically grown garden. Hordern Vale on the Great Ocean Road has ideal conditions for growing vegetables, herbs and fruit. We are lucky enough to be one of the few places in Victoria to have plenty of rain, sunshine and also protected from the salt winds from the coast nearby.

Parker Inlet - Great Ocean Walk

The Great Ocean Walk is spectacular in winter. There is always the risk of rain even in summer and the cooler months have provided the perfect opportunity to walk some of the Great Ocean Walk.

The Blanket Bay to Parker Inlet section takes you through trees and high above coast before dropping down to Parker Inlet. Apparently at low tide you can see part of the hull of the American Ship "Eric the Red" that was wrecked here in 1880. Supplies for the Cape Otway Light House would sometimes be dropped at Parker Inlet instead of Blanket Bay.

Vegetable Garden Extension

Winter and sunny weather on the Great Ocean Road is a perfect time to extend the vegetable garden. Having a restaurant in the country side has many advantages. Firstly we can grow our own food but the soil in Hordern Vale is possibly the best in Victoria. Along with the help from my neighbours in the valley, the vegetable garden can be extended quickly and easily. Bill from across the valley who has farmed for many years here has provided me with huge rolls of silage and then having a sheep farmer next door is perfect for getting sheep manure ($2 a bag). Many photos of this sign are on people's computers around the world! Planting now is being undertaken for Spring dining in the Restaurant.

The 12 Apostles

The 12 Apostles are just an hour from the Guest House and Restaurant. They are a must see on a trip down the Great Ocean Road. Just before the Twelve Apostles is Gibson's Steps which takes you down the cliff face on to the beach near one of the Apostles.

Otway Pilsner

Otway wheat beer (Belgian Style White beer)
Very refreshing hazy golden coloured spiced wheat beer with a taste of lightly roasted malts and citrus fruits. The use of unmalted wheat in addition to the usual barley malt, imparts a quenching tartness with a slight nuttiness. The addition of orange and coriander seasoning, as well as noble hops, adds acidity and a faintly astringent dryness to the finish. A mid strength Belgian Style wheat beer (4.3%). Otway Ale
A medium bodied ale which is deep copper in colour, derived from the use of crystal malts. A refreshing but appetizing beer with toffee and caramel flavours balanced nicely with traditional English hops. The all malt ale is warm fermented which adds some complexity to the beer and leads to a fruity aroma which compliments this particular style of beer. (4.9%)

Otway Red Ale
A medium to full bodied Irish Style Ale beer with a light reddish hue. A malt accented beer which starts with initial malt sweetness and finishes with a dryness from the addition of small quantities of roasted barley. Kent Golding hops provide the low hop bitterness and aroma which in keeping with this style. An easy drinking smooth beer. (5.0%). Bronze medal, 2008 Australian International beer show.

Vegetables planted this week include silver beet, cos lettuce, spinach, white onions, beetroot. The garden also has plenty of sugar snaps, rocket and silver beet coming through from plants that went to seed.

Our butternut squashes were picked this week.

The weather this week was colder for walkers on the Great Ocean Walk so each day they were provided with a different soup to take with them for lunch. Our soup variety this week was Tomato and Basil, Pea and Ham, Butternut Squash. Salads for rolls and sandwiches were picked each morning.

Nourished, Ferguson, near Beech Forest and the Otway Fly

As part of the Great Ocean Road Tour, a trip to Nourished, Otway Store and Museum is highly recommended. Step back in time into old potato sheds that have been converted into a fantastic place for coffee, morning tea or lunch. In winter sit by the pot belly stove. The shed is packed with photos from a bygone era detailing the history of Beech Forest, Lavers Hill and the Otways. Leanne and Mark serve the best coffee in the area. There is a large bottle top collection which was donated by Aire Valley Guest House. Nourished is just a short distance from the Otway Fly and Triplet Falls. There is also a special story on Cliff Young who lived nearby in Beech Forest.

If you are having a day off from your Great Ocean Walk tour then a hour or so in Nourished is a great place to rest.

Sunset on the Great Ocean Road at Aire Valley Restaurant

Sunsets are spectacular at the Aire Valley Restaurant. Tonight's guests had a spectacular sunset with orange and pinks in the clouds are an amazing blue sky on the hill near the horizon. The blue highlighted the silhouette of the cows grazing on the hill.

The humid day was perfect to finish off with dinner on the verandah overlooking the Aire River Wildlife Reserve with a spectacular sunset

The Berry House - Aire Valley Restaurant

Today, our gardener Wendy created "The Berry House" at Aire Valley Restaurant. Our berries have been transplanted into the glass house to create an environment where the birds don't get the first pickings of the fruit! Plants are watered through a drip system and of course they are being grown using organic methods. Berries include raspberries, gooseberries and blackberries. Mulberries are staying outside! Water is sourced from a dam, natural spring or rain water.

Walkers on the Great Ocean Walk 3rd March 2009

The Great Ocean Walk opened again today after being closed yesterday due to the high fire risk this morning. A group of eight walkers set off this morning from Aire River bridge with lunches packed from the Restaurant. Lettuce, tomatoes, cucumbers were all picked fresh from the Restaurant Garden. Just before the walkers left golden delicious apples were picked for them.

Rain was very welcome today for the garden which has been battling the heat over the last month. Only 3mm of rain in February.

Vegetables planted this week at the Aire Valley Restaurant:
spring onions, white onions, brown onions, beetroot, spinach, rainbow silverbeet, cos lettuce, leek, rocket, and sugar snaps. All our food is organically grown. Today with the temperature expected to be between 30 - 34 and a warm breeze, watering will be required on a regular basis.

Due to the temperature and winds today the Great Ocean Walk is closed today. The weekend looks much better for walking in the Otways.

The Aire Valley Restaurant Garden on the Great Ocean Road, Victoria was started in November 2008. Each month has seen the vegetable garden increase in size. This blog is for diners and guests to see what we are planting and which vegetables, salads and herbs are ready for the plate in the restaurant!
